Meet Executive Chef Nicholas Carreiro

Chef Nicholas Carreiro has led the kitchen at Vilma’s Restaurant at Touisset since April 2025, bringing a distinctive culinary style, a commitment to scratch-made food, and years of experience to the historic Touisset Country Club.

A Swansea native, Chef Nick developed his craft in professional kitchens both locally and beyond New England. His experience includes time at well-known local restaurants such as Kent’s, as well as working in Colorado’s fine-dining scene, where he further refined his technique and approach to elevated cuisine.

Since joining Touisset, Chef Nick has helped establish Vilma’s as a dining destination in its own right. His menus combine approachable comfort food with refined techniques and Portuguese-inspired flavors, emphasizing fresh ingredients, house-made preparations, generous portions, and dishes designed to keep guests coming back.

Carrying on a Family Tradition

Vilma’s Restaurant at Touisset is named in honor of Vilma Brigham, the original cook, co-owner, and matriarch of Touisset Country Club. From the club’s earliest days, Vilma welcomed golfers, neighbors, friends, and families with homemade food and genuine hospitality.

Her husband, Ray Brigham, spent two years designing and building the golf course by hand before Touisset Country Club officially opened in 1961. Today, Touisset remains proudly third-generation family-owned and operated, celebrating 65 years in 2026 while continuing to evolve for a new generation of guests.

Chef Nick carries that culinary tradition forward with his own perspective—honoring the welcoming, home-cooked spirit that began with Vilma while introducing a fresh and contemporary approach to the restaurant.
